Only fools still eat beef! You should be eating grass fed buffalo meat!

That's what we have in our freezer. A steer raised here on our property. This spring we got a bottle calf for the future. He's been eating grass and growing all summer. Then just Wednesday I went and got two more. The guy was selling bottle Holsteins for $50 each so I had to buy two. So we are back to bottle feeding but there will be lots of good beef a couple of years from now. More than my family can eat but it will be something I can sell.

It is the way to go, much more economical and healthier then buying beef. Also you have beef on the hoof and freezer so it is a long term food supply as well.

As for bison vs beef, the comparison isn't really fair because I bet they are comparing bison to regular grain/corn fed beef which are much fatter then grass fed. Plus because the omega3/6 fatty acid ratio is balanced in grass fed the fat is not unhealthy anyway. I think I heard somewhere that grain fed cattle are about 25% body fat and grass fed are about 6-8% body fat. If those numbers are true then grass fed beef would have about the same fat as bison. I know the steer I slaughtered was super lean. The hamburger meat is leaner then anything you can buy in the supermarket, even ground steak.

Grass fed is all well and good but corn fed, finished in the prime shed minus hormones can't be beat for flavor. I don't consume much meat anyway, maybe three times a week followed by a cigarette. A pack of smokes lasts me about 2 months. Eating tasty well marbled, tender beef in moderation, which I do, won't kill me in and of itself. I'll take my chances on the good tasting beef, a smoke from time to time and getting plenty of exercise....
